  • Limes are a hybrid citrus fruit who’s origins are traced to Indonesia and Southeast Asia.
  • There are several tipes of limes like the comun Key lime, kaffir lime, desert lime, West indian lime and Persian lime.
  • It was only introduced in western Europe by crusaders in the 12th and 13th century, while eastern Europe was acquainted with them in the 11th century due to arabian traders. Even tough it’s very common now in Brasil and Mexico, it was only brought to America by Columbus in his second voyage in 1493.
  • It’s a nutritious fruit filled with vitamin C, B6, A and E, folate, niacin thiamin, riboflavin, pantothenic acid, copper, calcium, iron, magnesium, potassium, zinc, phosphorus, phytochemicals and flavonoids.
  • Culturally it is believed to help indigestion, fever, constipation, prevent diabetes, cancer, heart disease and high blood pressure, reduce respiratory disorders, help with weight loss as well as improve the skin, hair, and teeth. Lime Cake with Lime Curd

Ingredients

  • CAKE

  • 5 Eggs

  • 250g Milk

  • 180g Butter – soft

  • 2 tbsp Oil

  • Juice and zest of 2 limes

  • 300g Flour

  • 300g Sugar

  • 1 teaspoon of Salt

  • 1/2 tbsp Baking powder

  • CURD

  • Juice and zest of 4 limes

  • 2 Eggs

  • 70g Butter

  • 200g Sugar

  • DECORATION

  • Whipped cream

  • Lime zest

Directions

  • In a mixer beat the butter with the sugar until fluffy.
  • With the mixer running on low, add the eggs one by one until well incorporated, then beat in the lemon juice and zest to a medium speed.
  • In a bowl combine flour, salt and baking powder.
  • When all is combined reduce mixer to low and add the flour mix and the milk, alternately in 3 batches each, making sure the batter is well mixed.
  • Grease a baking pan and cook at 180º degrees for 30 min.
  • CURD
  • In a pan add the lime juice and zest, sugar and butter, whisk in medium/low heat until butter dissolves and starts to boil.
  • In a bowl whisk the eggs. Add 2 spoons of the hot mix and whisk well.
  • Back in the pan, turn heat to low and slowly add the egg mix while whisking, to prevent eggs from scrambling.
  • Keep whisking for 20-25min until mixture thickens.
  • ASSEMBLY
  • When both cake and curd have cooled down, cut the cake in two even layers and fill it with the curd.
  • Decorate by spreading the whipped cream on the top and sprinkle the lime zest
