Is there anything better than banana foster? I love it with everything…ice cream, crepes, pudding…but you definitely need to try it on these awesome banana cupcakes.

Due to some coincidences (we both decided to buy a lot of bananas without telling the other..ups) this week I ended up with a bunch of bananas. I had already frozen some for my smoothies so I decided to make some desserts. Some healthier…some LUXURIOUS, like this banana cupcakes with banana foster.

Bananas are good green, ripe, small or big. They are super handy and you can turn them into savory or sweet foods. So be prepared to see a lot of banana recipes

This one is super sweet. Maybe too sweet. Just kidding, there’s not such thing 😛

But if you’re not a fan of too sweet things I advice to separate these. Maybe eat just banana foster with some plain vanilla ice cream, and make the banana cupcakes plain…oh well add the frosting or they’ll just be boring.

This recipe is actually a bit complex if you want all the components. It has banana cupcakes, banana foster, frosting and caramel. Well I can tell you from this point that the caramel is very optional. Unless you didn’t make enough foster then you definitely don’t need it. It’s more of a decoration prop.

Ingredients

  • 3 Bananas

  • 150g Sugar

  • 130g Butter

  • 2 Eggs

  • 1/2 cup of plain Yogurt

  • 190g Flour

  • 1 1/2 ts Baking powder

  • 1/2 ts Salt

  • 1 ts Cinammon

Directions

  • Pre-heat the oven to 180º, and grease your muffin tin
  • In a mixing bowl beat the sugar with the butter until fluffy
  • Add the eggs, the mashed bananas and the yogurt. Mix until well blended
  • In a separate bowl sift the flour, baking powder, salt and cinnamon
  • Add the dry goods to the mixer in 2 batches. Fold gently, don’t over mix
  • Split the batter in the muffin/cupcake tin and bake them 20 to 30 min.

So now your cupcakes are in the oven. IT’S TIME TO DO THE BANANA FOSTER. Friendly warning – eat before this…or there won’t be much left for the cupcakes.

Can you imagine bananas in an amazing caramel with flambeed rum? Well that’s what banana foster is. And then imagine it inside some scrumptious cupcakes. Mouth drooling right?

And these cupcakes are even better with an amazing buttercream on top

Yes I know what you are thinking…it’s too much! Yep it is…but YOU DESERVE IT! With me it’s either diet or all the way into Sugarland

So after you’ve done all the components, an your cupcakes are cold, it’s time to ASSEMBLE!

Cut a whole in the middle of the cupcakes and force the dough inside (no point in taking it off). Then fill it with the banana foster. Try to put some banana pieces inside. You’re gonna love finding them later. And a lot of caramel off course.

You can have them just like this but buttercream on top just gives it that extra creaminess.
