I found chia puddings recently, and only saw them as a breakfast thing. I really like them usually eat them with blueberrys and some jam. But recently I started looking at them as a healthy dessert.

Think this sounds weird? How do you eat your chia seeds?

Well I made Banana foster, then used it for Banana cupcakes…ate a whole lot of it. Felt guilty but still had some banana foster left. So…how to eat it without felling guilty? Well if I just put a spoon on it I’d eat 1000 kcal in just banana caramel, couldn’t make more sugar/flour option for it, so….what about chia pudding I tough.

And it turned out amazing. I mean It’s like a perfect “non guilty” dessert. You have your healthy chia pudding made with your favorite milk, but then, on top you just add some banana foster slices. Not too much, just enough to kill all your cravings. PERFECT

Facts about Chia

  • Chia” is the ancient Mayan word for “strength”
  • These seeds are full of fiber, protein, calcium, manganese, magnesium and phosphorus
  • They are antioxidant powerseeds
  • They have some carbs but most all of them are fiber
  • They can absorb up to 9 times their weight in liquid (or is it 27 times?)
  • They contain more omega-3s than salmon
  • What you eat is the seeds of the Salvia hispanica
  • You can use them as a substitute for eggs
  • Folklore has it that the Mayan and Aztec cultures used these tiny black seeds as an energy booster
  • Be careful eating them dry and drinking liquids after, has they expand and may block your digestive track

Do you know what banana foster is though?? It’s bananas caramelized in butter and sugar, and then flambeed in rum. Amazing right?

Here’s my basic Chia Pudding recipe. You can make it with any milk or beverage you prefer. I like mine with almond milk if I’m just adding fruit, as the almond milk is sweet so it helps giving it more flavour. In this recipe has the banana foster is super sweet I did it with plain old cow milk. But it’s up to you

Ingredients

  • 40g Chia seeds

  • 200ml your choice of Milk/Vegan beverage

Directions

  • In a small pan put the chia and the milk and cook in a medium heat until the chia seeds hydrate and swallow, turning into a pudding.
  • Another way to make it is to add the chia and milk in a jar or container and put them overnight in the fridge (minimum 3-5h). They will also hydrate turning into a pudding.
